Domaine Naturaliste Discovery Syrah Tamar Valley guided by the whims ofSyrah, picked at moderate ripeness, retains its elegance and natural acidity. The wine is cool fermented at 20 to 22C, with whole berries atop 25% whole bunches, creating a subtle aromatic lift and introducing a wilder spice element to the pure Syrah perfume. This cool climate, medium bodied Syrah is perfectly balanced. Aged for 10 months on fine lees in 500L large format French oak puncheons, with 15% new oak mainly from the Allier and Vosges
