Yamada Nishiki rice is polished to 50% in house and brewed with soft water that has a delicate sweetness. The sake is stored raw in a thermal tank and pasteurised only once when bottling. It has a fresh aroma and flavour, and is characterised by a soft mouthfeel and a refreshing, sharp taste.
